Chocolate and Date Cake

    This cake is simple enough to eat with a cuppa tea, yet good enough to serve for a special occasion. It's one of my family's favourites.

    Ingredients
    Serves: 24 

    • 275g dates, pitted and chopped
    • 250ml boiling water
    • 225g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 3 teaspoons cocoa powder
    • 200g caster sugar
    • 125g butter
    • 2 eggs
    • 50g chopped walnuts
    • 175g chocolate chips

    Directions

    1. Preheat the oven to 180 C. Grease and flour a 23x33cm baking tin.
    2. In a small bowl, pour boiling water over dates and set aside to cool.
    3. In a medium bowl, mix flour, bicarbonate of soda, salt and cocoa. Set aside.
    4. Cream butter and sugar until light and fluffy. Add eggs. Add flour mixture alternating with cooled date mixture. Fold in chopped nuts and 1/2 of the chocolate chips.
    5. Pour mixture into prepared baking tin and spread evenly. Sprinkle remaining 1/2 of the chocolate chips over top.
    6. Bake for 45 to 60 minutes, or until a knife inserted into middle of cake comes out clean.

    This cake is yummy. Watch carefully after 40 minutes so it doesn't burn. The kids don't care for it, but that's OK, that much more for me!  -  01 Sep 2001  (Review from Allrecipes US | Canada)

    Be careful not to overbake as it will come out a bit dry. I overfilled my tin and it took quite a while to bake and the edges came out dry which made it hard to slice nicely. My husband loves date loaf and chocolate so I thought I'd combine the two for him. He liked it but said the chocolate overpowered the dates and he couldn't taste them which he thought was a waste of dates. Would I bake this again? Yes, probably.
