Ginger Lemongrass Cordial

    Mix lemongrass puree and ginger syrup with soda and you get a drink that goes great with Thai or other spicy curry.

    • 175 g preserved ginger
    • 4 tablespoons ginger syrup from the jar
    • 1 tablespoon lemongrass purée
    • 2 litres soda or sparkling mineral water
    • Ice cubes

    1. Put the ginger, syrup, lemongrass purée and 150 ml of the sparkling mineral water into a blender and process to a smooth purée.
    2. Pour into glasses, add mineral water to taste and ice cubes, and serve.
    3. Tip: lemongrass purée is available in small jars or tubes in supermarkets.
