    Ingredients
    Serves: 10 

    • 3-1/2 cup baby spinach,torn leaf lettuce ,chopped sweet red pepper
    • 1/2 cup sliced red onion ,mandarin oranges ,sliced fresh mushrooms
    • 1 TSP tablespoon red wine vinegar,1 medium cucumber, sliced,• 6 cups torn salad greens
    • 2 TSP tablespoons olive oil
    • 1 TSP tablespoon raspberry vinegar
    • 1 TSP teaspoon sugar
    • 1/4 teaspoon minced fresh parsley
    • 1/4 teaspoon minced fresh basil

    1. In a large salad bowl, combine the spinach, lettuce, red pepper, onion, oranges and mushrooms.
    2. In a small bowl, whisk the dressing ingredients. Drizzle over salad; toss to coat. Yield: 4 servings.
    3. In a small bowl, mix together mayonnaise and a little pickle or lemon juice. Do not make the mixture to soupy. Pour over vegetables, and gently stir to coat.
