About this recipe: This is a healthy veg dish that will go well with Dosa, Chappathi, Bread etc and can be prepared with little preparation.

Serves: 3 

  • 2 tomatoes, capsicums
  • 1 chilli
  • a few coriander leaves
  • 2 spoons oil
  • 1/2 spoon mustard
  • 1/4 spoon turmeric powder,
  • 1/2 spoon garam masala
  • Salt to taste

  1. Clean and finely chop tomatoes, capsicums, carrots, chillies and coriander leaves.
  2. Heat 2 spoons of oil in a pan for about 2 minutes and add 1/2 spoon mustard, 1/4 spoon turmeric powder. Once the Mustard bursts, add in the chopped chillies and vegetables. Mix well.
  3. After 3-4 minutes on a medium flame, add 1/2 spoon of salt (or as per your taste preference) and let it cook for another 5 minutes on a low flame. Then add 1/2 spoon of Garam Masala and mix well.
  4. Let the spices sink in to the tender vegetables for another 2 minutes. Garnish with finely chopped coriander and serve hot.
