Chickpea Pizza

    Try this tasty no-cheese pizza made with chickpeas, capsicum, and onion. You can sprinkle extra whole cooked chickpeas over the pizza if you want.

    Serves: 8 

    • 150 grams chickpeas (kabuli chana)
    • 4 tablespoons olive oil
    • 1 tablespoon lemon juice
    • 3 tablespoons tahini
    • salt to taste
    • 1 pizza base
    • 1 red capsicum, sliced
    • 1 orange capsicum, sliced
    • 1/2 small red onion, chopped
    • fresh coriander leaves as garnish

    1. Pressure cook chickpeas until soft. Puree with olive oil, lemon juice and tahini. Season with salt to taste. Refrigerate until ready to make the pizza.
    2. Preheat oven to 230 C.
    3. Spread chickpea puree evenly over pizza base to within 2 cm of edge. Arrange sliced capsicum and onions evenly over the pizza. Brush edge lightly with additional oil.
    4. Bake for 8 to 10 minutes, or until pizza base is golden brown. Top with fresh coriander leaves. Not to much. Just enought to add colour to the pizza.
