Leftover Chicken Curry Pizza

    I love pizza! And I am always looking for new ways to make it. This "experiment" turned out quite well. With the help of a few fresh vegetables, the chicken curry I made for lunch turned into a great pizza.

    Serves: 8 

    • 1 pizza base
    • 10 ml olive oil
    • 2 cups leftover chicken curry with sauce
    • 1 red or orange capsicum, sliced
    • 1/2 small red onion, chopped
    • fresh coriander leaves for garnish

    1. Preheat oven to 230 C.
    2. Spread chicken curry evenly over pizza base to within 2 cm of edge. Arrange sliced capsicum and onions evenly over the pizza. Brush edge lightly with additional oil.
    3. Bake for 8 to 10 minutes, or until pizza base is golden brown. Garnish with fresh coriander.
