    About this recipe: Vegetable Pakora is a yummy, healthy and easy afternoon snack. It can also be prepared as lunch snacks for school kids. The pakoras are usually served with tomato sauce or ketchup.

    Ingredients
    Makes: 8 

    • 1/4 of a small cauliflower
    • 1/4 of a small cabbage
    • 1 carrot
    • 2 medium sized potatoes
    • 4 medium sized onions
    • 8 green chillies
    • salt as needed
    • 5 cups bread crumbs
    • 1/2 cup cornflour
    • 1 tablespoon of lemon extract
    • 2 eggs
    • 2 cups vegetable oil for deep frying

    1. Chop all the vegetables into small cubes and set aside in a bowl.
    2. Mix salt to the vegetables in the bowl. Add bread crumbs, cornflour, lemon extract and 2 eggs. Mix well with hand.
    3. Heat oil in a deep frying pan. Make small balls out of the mixture and fry in the oil until the balls ( pakoras) turn deep brown.
    4. Serve with tomato sauce or ketchup.

    Tip

    All the vegetables should weigh around 500 g.
