Irina’s Mixed Vegetable Bhaji
This is an easy and yummy vegetable fry dish. It is often cooked during the season when a lot of fresh vegetables are available. It is eaten with pulao or plain white rice.

50 g Borboti
50 g potato-cut like french fries
50 g carrot-cut like french fries
100 g cauliflower
50 g motorshooti (peas)
50 g eggplant-cut like french fries
4 tablespoon vegetable oil
salt as needed
½ tablespoon ghee
2 tablespoon onion paste
1 teaspoon ginger paste
1 teaspoon garlic paste
6 green chillies cut in half along the length
½ teaspoon white pepper balls
½ teaspoon sugar
- Boil each of the vegetables separately.
- On a pan heat the oil, fry the vegetables with some salt and set aside.
- On a separate pan heat the ghee and add the onion, ginger and garlic pastes. Stir and mix well and sprinkle the green chillies.
- Add the boiled vegetables, sprinkle white pepper balls and sugar. Mix, lower the heat and put the lid on for 5 minutes.
