    About this recipe: Ilish fish with eggplant is a very traditional recipe that can be found almost everywhere in the Bengal. It is a bit spicy, and is eaten with plain white rice as an everyday dish. It becomes quite popular during the season when Ilish fishes are widely available.

    Ingredients
    Serves: 8 

    • 1/2 kg eggplant
    • Just a pinch of turmeric powder
    • Salt as needed
    • 2 tablespoons of vegetable oil
    • 8 pieces of Ilish fish ( Hilsa fish)
    • 2 medium sized onions, sliced
    • water as needed
    • 2 garlic cloves, grinded into a paste
    • 1/2 teaspoon of cumin seeds paste
    • 1/2 teaspoon of mustard seeds paste
    • 7-8 green chillies, cut in half along the length
    • 2 potatoes, peeled and cut like French fries

    1. Cut the eggplant so that some medium sized thick crayon shaped pieces form. One of the ends of an eggplant piece will be like a cone, and the bottom end will be flat.
    2. Cover the fish pieces with just a pinch of turmeric powder and salt.
    3. Heat a pan with 1-2 tablespoons of oil and fry the fish slightly. Set aside the fried fishes.
    4. Heat a pan with 1-2 tablespoons of oil and fry the fish slightly. Set aside the fried fishes.
    5. Add 1/2 liter of water and add the garlic, cumin and mustard pastes. Sprinkle some salt and green chillies. Stir the mixture well.
    6. When bubbles start to form, add the eggplant and potato pieces.
    7. When the water dries up a bit, add the fish pieces. Lower the heat and cook with the lid on for 10 minutes.
