Rosy’s spaghetti with chicken

    This spaghetti recipe is great for kids' lunch meals. The sauce is spicy and sweet.

    Serves: 3 

    • 1 cup of boneless chicken
    • 1 cup of tomato sauce
    • water as needed
    • 2 tablespoons of soya sauce
    • Just a pinch of oregano
    • Just a pinch of paprika
    • 1 teaspoon of sugar
    • 2 tablespoons of mayonnaise
    • 4 green chillies, chopped
    • 2 tablespoons of chopped mint leaves
    • 1/2 cup of olive oil
    • 3 cups boiled spaghetti strands
    • 1/2 cup of boiled baby corn
    • 1 teaspoon of vegetable oil
    • 1 egg

    1. Chop the boneless chicken into cubes and mix well with tomato sauce, 1 cup of water, soya sauce, oregano, paprika and sugar. Heat a pan and pour the mixture on it. Cook until a thick sauce forms. Set aside the chicken with the sauce.
    2. Add mayonnaise, green chillies, mint leaves and just a pinch of sugar to a blender and blend well. Set aside the blended mixture
    3. Now heat a pan with olive oil and add the boiled spaghetti and baby corn. Sprinkle some salt and fry well
    4. Mean while heat another pan with just 1 teaspoon of vegetable oil. Break an egg in and make scrambled egg. Now add the mixture of mayonnaise, green chillies and mint leaves and mix well. Pour the chicken gravy and stir for just a bit. Pour on a bowl.
    5. Serve with the cooked spaghetti.
