About this recipe: Rasgulla or Roshogolla in Bengali is a traditional sweet served on special ceremonies or occasions such as weddings or birthdays. It is also distributed amongst friends and family when a good news comes up, such as a son getting his first job, or a daughter receiving first class in her exams. It is of course sweet, and delicious by itself.

Serves: 6 

  • 8 cups of water
  • 1 kg of sugar
  • 2 tablespoons of flour
  • 1 tablespoon of ghee
  • 2 cups of chana
  • tablespoons of shujee (semolina)

  1. Boil the water with the sugar to make a thick sugar syrup in a big cooking pot or a deep frying pan.
  2. On a separate bowl mix the flour with ghee. Add the chana and semolina to the mixture, and mix well. Make small balls out of the mixture and place carefully in the thick sugar syrup. Put the lid on and allow the balls to simmer and cook in the syrup for 30 minutes. Every now and then, remove the lid and sprinkle some drops of water.
  3. It is delicious by itself. A traditional Bengali dessert.
