About this recipe: Kolar Mocha or Banana Flower Mash is an extremely healthy food, rich in iron. It is a traditional Bengali food item. It is served with plain white rice.

Serves: 5 

  • 1 kolar mocha ( 1 piece of banana bark-1 kg), cut into small pieces
  • Water as needed
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of onion paste
  • 1/2 teaspoon of cumin paste
  • 2 bay leaves
  • 1 teaspoon of red chili powder
  • 2 teaspoons of Turmeric powder
  • Salt as needed
  • 2-3 cinnamon sticks
  • 4-5 green chilies

  1. Peel the skin of the banana bark. Take out the thin thread like structure from each of the flower petals ( banana flowers-mocha). Now boil the banana flowers in water. Grind the boiled flowers into a soft paste using a sheel pata.
  2. Heat a frying pan with oil and add the onion and cumin pastes, bay leaves, red chili and turmeric powders, salt and cinnamon sticks. Stir well and add the banana bark paste. Stir and mix well by adding 1/2 cup of water.
  3. Put the lid on and allow to cook for 20 minutes. Take the lid off every now and then, and stir and cook for 20 more minutes.
  4. Sprinkle the green chilies and cook until the water dries up and the oil starts to float and simmer on top.
  5. Serve with plain white rice.
