    About this recipe: Bitter Gourd fry or Korolla Bhaji is an extremely healthy meal, especially for those suffering from diabetes. It is of course bitter, but I would say it is quite tolerable. Many people have it as a medicine. It is served with plain white rice. People eat this as medicines

    Ingredients
    Serves: 5 

    • 2 korollas
    • 2 potatoes
    • 1 tablespoon of oil
    • 4 onions, sliced thinly
    • 4-5 cloves of garlic, sliced thinly
    • Salt as needed
    • 1/2 teaspoon of turmeric powder
    • 4-5 green chilies, sliced in half along the length

    1. Cut the korolla in half and take the seeds out. Chop the korolla in thin slices. Was the korolla slices and keep on a separate plate.
    2. Peel the skin of the potatoes and make thin slices.
    3. Heat oil in a frying pan and fry the onion and garlic slices.
    4. After frying just for a bit, add the korolla and potato slices. Sprinkle the salt and turmeric powder and stir.
    5. Allow to cook on medium heat. Stir 2-3 times.
    6. When the korolla has been almost cooked, turn the heat down and allow the bhaji to simmer on low heat for a few more minutes. Sprinkle the green chillies and serve.
    7. Do not cook for too long as the bitterness of the korolla will spread all over.
    8. Serve with plain white rice.
