Kathaler Cake (Jack fruit cake)

    Kathal or Jack fruit is the national fruit in Bangladesh that is available in the summer. The jack fruit cake is made in rural and urban areas in many different ways. This recipe does not have a very strong flavor of the jack fruit, but rather gives off a rich and flavorful scent. It is really yummy, and I truly believe that each bite of this cake is a little piece of heaven. :) It is delicious by itself.

    Serves: 8 

    • 500 g of jack fruit pieces
    • Water as needed
    • 1 cup of rice powder
    • 1 cup of flour
    • 2 cups of sugar
    • 2 eggs
    • Salt-just a pinch
    • 2 tablespoons of milk
    • 1/2 teaspoon baking powder
    • 2 tablespoons of ghee
    • 2 tablespoons of soyabean oil
    • 1 tablespoon of raisins and nuts

    1. Take the jack fruit pieces (around 15 pieces) on a plate.
    2. Snapshot of other ingredients needed.
    3. Take the seeds out of each of the jack fruit pieces.
    4. Place the jack fruit pieces (without the seeds of course) in a blender and blend with 1 cup of water. Set aside the jack fruit extract. Meanwhile, pre-heat the cake tray for 10 minutes at 180 degree celcius and grease the oil on it.
    5. Add the rice powder, flour, sugar, eggs, salt, milk, baking powder and ghee to a bowl. Mix well.
    6. Pour the jack fruit extract and stir and mix well to make a thick liquid.
    7. Pour the liquid mixture on the tray and sprinkle the raisins and nuts. Bake in a oven at 180 degree Celsius for 30-40 minutes.

    Serving suggestion

    It is delicious by itself.
