    About this recipe: Vegetable khichuri is great way to utilize any left over pieces of vegetables. It is healthy, and is delicious by itself. It tastes really good with any spicy curry.

    Ingredients
    Serves: 4 

    • 1/2 cup of vegetable oil
    • 1 cup onions, sliced
    • 4 bay leaves
    • 400g potatoes, peeled and chopped into small pieces
    • 1 cauliflower (big), chopped
    • 500g grean peas
    • 6 tomatoes, chopped
    • 4 carrots, chopped
    • 1/2 cabbage, chopped
    • 3 teaspoons of cumin seeds
    • 5 dry red chillies, powdered
    • 2 teaspoons of ginger paste
    • 1 teaspoon of turmeric powder
    • salt as needed
    • water as needed
    • 800g mugh dal (lentils)
    • 1kg rice
    • 1 tablespoon of butter oil (ghee)
    • 2 cardamoms
    • 2 cinnamon sticks
    • 2 cloves
    • 1 handful of coriander leaves, chopped
    • 6 green chilies

    Directions

    1. Heat oil and add the onion slices and bay leaves. Fry just for a bit and add the chopped vegetables, cumin seeds, powdered dry red chilies, ginger paste, turmeric powder and salt. Pour in 1/2 cup of water and cook until the water dries up a bit and oil starts to float on top.
    2. Now add the dal, rice and 8 cups of water. Also add the ghee and cardamoms, cinnamon sticks and cloves. Stir well and put the lid on for 30 minutes on high heat.
    3. Turn the heat down-cook for another 20 min.The water will dry up when the vegetables, rice and dal are cooked.
    4. Garnish with coriander leaves and green chilies.
    5. Serve :)
