Palong Paratha (Spinach Paratha)

    Having trouble making your little one eat leafy vegetables like spinach (palong shak)? This is a recipe that will make a yummy and healthy bread with spinach that kids will love! It can be served with curry or dal.

    Serves: 3 

    • 2 8 bundles of palang sag (palong shak)
    • 2 bundles of green onion leaves
    • 2 tablespoons of ghee
    • 2 onions, sliced
    • salt as needed
    • 500 g of flour
    • 150 g of beshon (besan)

    1. Cut the palong shak and onion leaves into very thin slices.
    2. Heat a pan with 1 teaspoon of ghee and fry the onions slightly
    3. Now add the shak leaves and salt. Water will be released from the shak leaves and allow the water to dry off from the leaves.
    4. Transfer the wilted leaves on to a bowl when the water dries off.
    5. Add the ata, beshon and 2 cups of water to make a dough.
    6. Make few balls out of the dough and roll the dough balls out into flat tortillas.
    7. Heat a tawa with the rest of the ghee and fry the tortillas until golden brown on both sides. Do make sure the tortilla sides are reversed from time to time to ensure even frying.
    8. Serve!
