Egg Salad on Toast

    Ingredients
    Serves: 1 

    • 1 egg, hardboiled and cubed
    • 1 tablespoon of cubed carrots, cucumber and capsicum
    • A pinch of black pepper powder
    • salt as needed
    • 1 tablespoon of mayonnaise
    • 2 bread pieces, toasted
    • Just a bit of chopped coriander leaves

    1. Mix the cubed egg and vegetables together with mayonnaise, salt and black pepper powder.
    2. Spread on toasted bread.
    3. Place a few chopped coriander leaves.
    4. Serve immediately.
