Mishti Kumra Bhaji (Pumpkin Fry)

About this recipe: This is a rather simple, light and sweet dish that is served with plain white rice. It also very healthy and a treat for any vegetarian.

  • 1/2 kg 1 small mishti kumra (pumpkin)
  • 1 tablespoon of vegetable oil
  • 1 big onion, sliced
  • 3-4 cloves of garlic, sliced
  • Salt as needed
  • 3-4 green chilies, sliced in half
  • Pinch of turmeric powder


  1. Peel the skin of the pumpkin and grate it into thin light slices.
  2. Heat a pan with oil and fry the onion and garlic slices.
  3. Sprinkle the salt and add the green chilies.
  4. Add the pumpkin slices and sprinkle just a pinch of turmeric powder.
  5. Stir and cook until the pumpkin slices become soft and the water released dries up.
