Mishti Kumra Bhaji (Pumpkin Fry)

About this recipe: This is a sweet and slightly spicy fry of pumpkin. It is served as an everyday dish with plain rice.

  • 8-10 small pieces of pumpkin, grated into thin slices
  • Salt as needed
  • 1/2 teaspoon of turmeric powder
  • 1 tablespoon of flour
  • 2 tablespoon of besan
  • 1 tablespoon of cornflower
  • 1/2 teaspoon of ginger paste
  • 1/2 teaspoon of red chili powder
  • 1 tablespoon of water (just enough to make a paste)
  • 1 cup of vegetable oil for deep frying


  1. Wash the sliced pumpkin.
  2. Mix the pumpkin slices with salt and turmeric powder. Set aside for a while.
  3. Add flour, besan, cornflower, ginger paste, red chili powder and water to make a paste.
  4. Pour the pumpkin slices in the bowl with the rest of the ingredients.
  5. Allow the slices to soak in the spices.
  6. Heat a pan with oil and deep fry the pumpkin slices.
  7. Serve with plain white rice.
