About this recipe:As the name suggests, this is a unique pitha recipe that is shaped like a shell. It is really easy and fun to make! It is salty in taste, and tastes great with grated cheese or ketchup. However, it can be also served with sugar or maple syrup.
Water as needed to make dough out of the rice powder
Salt as needed
1 cup of rice powder
Vegetable oil-for deep frying
Boil water with some salt. Add the rice powder slowly and continue to stir until water dries up. Be careful so that no clumps form when stirring.
Gather the mixture on a rolling board into dough. Make small balls out of the dough.
Roll out each ball into a small oval shaped circle of 1 cm thickness. Bend the circle so that a cleave forms in the middle. Take a fork and press slightly on half side of the circle so that some vertical lines form such as that in a shell. Repeat so that only one half of the oval circle has these pressed lines. Be careful when pressing as you would not want too hard and destroy the shape. Shell like pithas will form.
Heat a deep frying pan with oil. Fry the pitha until they turn golden brown
