About this recipe: Chola Bhaji is a regular Iftar item during Ramadan. It is spicy and served hot with other Iftar items such as begunee, dal er bora and puffed rice. It tastes great when a bit of ketchup is added to it.

  • 2 cups of chola, soaked for 4-5 hours in water
  • 1 tablespoon of vegetable oil
  • 2 onions, sliced
  • 4 green chilies
  • 1/2 teaspoon of Turmeric powder
  • 1/2 teaspoon of Red chili powder
  • 1/2 teaspoon of Coriander powder
  • 1/2 teaspoon of garlic paste
  • 1/2 teaspoon of ginger paste
  • A few coriander leaves
  • 1/2 teaspoon of cumin powder


  1. Boil the soaked chola for 30 minutes. Filter out the water.
  2. Heat a pan with oil and fry the onions and green chilies. Sprinkle the turmeric, red chili and coriander powders as the onions and green chilies get fried. Also add the garlic and ginger paste. Stir well.
  3. Add the boiled chola and stir well. Cook until the spices mix well with the chola and a thick gravy forms.
  4. Sprinkle the coriander leaves and cumin powder. Stir and serve hot with puffed rice and other Iftar items.
