Plain pudding

    This is a simple but delicious dessert. Puddings are not of Bengali origin, but became known during British colonization of the Indian subcontinent.

    • 4 eggs
    • 2 cups of milk
    • 2 drops of vanilla essence
    • 3 cups of sugar
    • 5 tablespoons of butter


    1. Beat the eggs well in a blender. Also add the milk, vanilla essence and 2 cups of sugar. Blend well. Set aside the pudding mix.
    2. In a thick bottomed hot pudding pan (that can be fitted in a pressure cooker for steam cooking), add the rest of the sugar. Continue stirring the sugar on high heat until the sugar melts. From this point on, just swirly the pan at a constant pace.
    3. When the sugar crystals have melted, add the butter. Whisk continuously until all the butter melts.
    4. Turn the heat off when the butter has melted.
    5. Continue to whisk for a bit and set aside the caramel. When the caramel has cooled and solidified, add the pudding mix.
    6. Put a lid on and steam cook in a pressure cook for 30 minutes.
    7. After 30 minutes when the pudding has been cooked, slowly turn over the pan on to a serving plate. Carefully transfer the pudding on to the plate.
    8. Allow the pudding to cool in a freezer.
    9. It is delicious by itself.
