Ilish Roast (Hilsa Fish Roast)

    This is a royal dish made when hilsa becomes widely available. It is spicy and sweet and is served with pulao.

    • 500 g of Ilish (Hilsa) fish pieces
    • 5 tablespoons of vinegar
    • 50 g of ginger paste
    • 50 g of garlic paste
    • salt as needed
    • 50 g of white oil ( olive, soy bean or vegetable oil)
    • 4 bay leaves
    • 50 g of garam masala powder
    • sugar-just a pinch
    • 1 tablespoon of chopped coriander leaves


    1. Mix the fish pieces with vinegar, ginger and garlic pastes and salt. Set aside for a while.
    2. Heat a frying pan with oil. Add the bay leaves and garam masala powder on medium heat. Add the fish pieces and fry.
    3. Hilsa fish does not take long to cook. Serve by sprinkling sugar and chopped coriander leaves.
