Lebur achar (lemon pickle)

    This is a flavorful pickle that is often served with dal. The pickle itself is very sour, and slightly bitter. However, it has a beautiful aroma and the pickle is taken in small portions and mixed with dal or any curry.

    • 8 lemons
    • 1.5 cups of vinegar
    • 1 cup of salt


    1. Scrape the skin of the lemons.
    2. In a saucepan, add 0.5 liters of water and add the lemons when the water turns hot.
    3. Allow the lemons to cook in the water for 5 minutes.
    4. Pour vinegar and add the lemons one at a time.
    5. Mix in salt.
    6. Close the lid of the jar.
    7. Sun dry for 10-15 days.
    8. The lemons will become soft and turn slightly brownish in color.
