Khejur er rosh er payesh (Date Juice Payesh)

    Khejur er rosh or date juice becomes available in winter and the juice is used to make this milk based creamy dessert. It is delicious by itself, but can be served with parathas, loochis or roti.

    • 1 cup of pulao rice, washed and drained
    • 2 liter of milk
    • 1.5 cup of date juice, or date jaggery
    • 2 cardamoms
    • 2 cinnamon sticks
    • 1 handful of nuts and raisins


    1. Heat the milk in a saucepan and thicken it to half its volume.
    2. Grind the rice grains using a mortar-pestel or sheel pata so that the grains are half broken.
    3. Add the rice to the thickened milk, and stir continuously.
    4. Also add the date juice or jaggery while stirring continuously.
    5. Sprinkle cardamoms and cinnamon sticks, if preferred and mix.
    6. When the milk, rice and date juice have been mixed well and you can smell the distinct smell of the date jaggery or juice, then turn off the heat.
    7. Pour the payesh on a serving dish. Garnish with nuts and raisins.
    8. Serve cold.
