Begun Bhaji (Eggplant Fry)

    Begun bhaji or eggplant fry is a one of the key dishes of Bengali cuisine. It is very easy to make, and is served with plain white rice.

    • 2 big round eggplants, sliced in round shapes
    • salt as needed
    • 1/2 teaspoon of turmeric powder
    • 1/2 teaspoon of red chili powder
    • 1/2 teaspoon of coriander powder
    • 1 cup of soybean oil, each time for frying ( depends on the batch or the size of the pan)


    1. Make some criss-cross slits in each of the eggplant slices.
    2. Mix the eggplant slices with salt, turmeric, red chili and coriander powders, and set aside for 10 minutes.
    3. Heat a pan with 1-2 tablespoons soybean oil. Add the eggplant slices a few at a time. Fry on each side for a few minutes until the eggplant turns brown.
    4. Repeat for 1-2 more batches.
    5. Serve with rice or pulao.
