Pach Mishali Sabji o Chingri Bhaji (Fry of five kinds of mixed vegetables with shrimps)

    This is a simple way to use tid bits of various kinds of vegetables at home and cook a delicious side dish. The crunchy and juicy shrimps bring in added taste. The dish can be served with rice for lunch or dinner. However, the leftover of this dish is great to have with roti for breakfast.

    • 4-5 pointed gourds, peeled and sliced in short long strips
    • 2 potatoes, pealed sliced in short long strips
    • 2 jhinga ( ridge gourd), pealed sliced in short long strips
    • 2 chichinga (snake gourds), pealed sliced in short long strips
    • 1 green papaya (raw), pealed sliced in short long strips
    • 2 tablespoons of soybean oil
    • 1/2 cup of onion slices
    • 1/2 cup of small shrimps
    • 1/2 teaspoon of ginger paste
    • 1/2 teaspoon of garlic paste
    • 1 teaspoon of onion paste
    • 1/2 teaspoon of coriander powder
    • 1/4 teaspoon of black pepper powder
    • salt as needed
    • 4-5 green chilies, sliced in half along the length
    • 1 tablespoon of chopped coriander leaves


    1. Wash the vegetable slices and drain the water out.
    2. Heat a pan with the oil. Fry the onion slices and shrimps.
    3. Add the ginger, garlic and onion pastes, coriander and black pepper powders and salt. Stir and cook until the water released dries up and the oil simmers on top.
    4. Add the vegetable slices. Stir for a bit. Cook with lid on for 15 minutes. Stir every now and then slowly.
    5. Sprinkle green chilies and chopped coriander leaves when the dish is done.
    6. Serve.
