Sujee nesesta halwa (semolina nesesta halwa)

    Sujee or Semolina nesesta halwa is special because of the way it is prepared. The extract from the semolina is only used to make the halwa. It is delicious by itself, but it can be also served with paratha, roti or loochis.

    • 250 g of semolina or sujee
    • 2 cups of water
    • 1/2 cup of ghee
    • 2 cups of sugar
    • 1/2 cup of sliced pistachio nuts and whole raisins


    1. Soak the semolina in water for 4-5 hours.
    2. Squeeze the semolina so that the semolina extract comes out. Collect the semolina extract and the water in a bowl. Leave out the semolina grains.
    3. Heat a pan with ghee. Add the extract and water collected. Mix in sugar and stir steadily and consistently.
    4. Pour the mixture on to a serving dish when it thickens and hardens.
    5. Sprinkle the sliced nuts and whole raisins.
    6. Cut out diamond shaped halwa slices and allow to cool.
