1/4 teaspoon of methi powder ( fenugreek powder) –double check
1/2 cup of tok dahi/doi or Greek plain yoghurt
2.5 cups of duck slices ( including neck, liver, head and the meat)
1 cup of cubed potatoes
salt as needed
water as needed
4-5 cinnamon sticks, powdered
4-5 cardamoms, powdered
4-5 cloves, powdered
4-5 green chilies
2 tomatoes, cubed
Heat a pan with oil. Fry the onion slices so that they become golden brown in color.
Add the ginger, garlic and cumin pastes, black pepper, dry red chili, turmeric and methi powders. Stir and add the yoghurt. Cook until the water released dries to form thick gravy with oil floating on top.
Add the duck slices and potatoes. Sprinkle salt. Pour in 1-2 cups of water and allow the meat and potatoes to cook with lid on.
When the meat has become tender and the potatoes soft, sprinkle the powdered cinnamon sticks, cardamoms and cloves.
Also sprinkle the green chilies and tomato cubes. Allow these ingredients to simmer for 5-7 minutes.
