About this recipe: Kulcha is a indian bread served with chole. Traditionally its baked in tandoors but since its not possible for every1 to have tandoors it can be made it microwaves, ovens on even on Tava. Serve kulcha hot with chole, onions, a slice of lemon and a dallop of butter. Stuffings can vary as per choice. Recipe given here makes 8 kulchas.

  • 2 cups of maida seived
  • 2 tspn of baking soda
  • 2 tspn of salt
  • 1 tspn of sugar
  • 3 tspn of curd
  • 1 tspn refined oil
  • milk or water to knead the dough
  • 3 medium sized potatoes boiled
  • 2 tspn of finely chopped mint leaves
  • 2-3 tspn of finely chopped coriander leaves
  • 1 medium sized onion finely chopped
  • 1 tspn of tumeric powder
  • 1 tspn of cumin seeds ( jeera)
  • 1 tspn of chat masala
  • 2 green chilles finely chopped
  • 1 tspn of grated ginger


  1. sieve the flour along with salt and baking powder and to it add sugar.
  2. Now add 1 tspn of oil and yogurt and mix throughly.
  3. Add milk ( preferably warm) and knead to a smooth dough. You can even use water to knead the dough.
  4. Cover it with a damp cloth and let it rest for atleast 1 hour.
  5. Now for stuffing :
  6. Peel the boiled potatoes and mash it leaving no lumps. Now to this add finely chopped mint leaves, coriander leaves, onions, turmeric, chat masala,salt, green chilles and mix throughly
  7. After resting the dough knead it slightly and divide it into 8 equal sized balls
  8. Roll the dough using fingers into small rotis and fill it with aloo stuff and seal it. Similarly stuff other balls as well. Let these also rest for a while. ( Resting after stuffing makes it easy to roll)
  9. Now dust each stuffing ball with little flour and roll it out.
  10. Hat the girdle and roast this stuffed kulcha on it till done.
  11. Serve hot.
