About this recipe:
Anda Bhurgi is the Maharashtran way of eating scrambled eggs. It is of course spicy, and the use of cumin seeds is a must. Enjoy with warm chapattis.
2 tablespoons soybean oil
1/2 tablespoons cumin seeds
1 teaspoon chopped green chilies
2 tablespoons chopped onions
1 tablespoon chopped tomatoes
salt as needed
1/2 tablespoon turmeric powder ( haldi)
3 eggs ( anda)
coriander leaves for garnishing
- Heat a pan with soybean oil. Sprinkle the cumin seeds, along with chopped green chillies, onion and tomatoes. Sprinkle salt as needed, and fry the ingredients on low flame.
- Sprinkle the haldi (turmeric powder) and mix it well with the frying ingredients.
- Crack the 3 eggs and stir and mix continuously to make bhurgi.
- Garnish with freshly chopped coriander leaves.
