    Anda Bhurgi is the Maharashtran way of eating scrambled eggs. It is of course spicy, and the use of cumin seeds is a must. Enjoy with warm chapattis.

    Serves: 3 

    • 2 tablespoons soybean oil
    • 1/2 tablespoons cumin seeds
    • 1 teaspoon chopped green chilies
    • 2 tablespoons chopped onions
    • 1 tablespoon chopped tomatoes
    • salt as needed
    • 1/2 tablespoon turmeric powder ( haldi)
    • 3 eggs ( anda)
    • coriander leaves for garnishing

    1. Heat a pan with soybean oil. Sprinkle the cumin seeds, along with chopped green chillies, onion and tomatoes. Sprinkle salt as needed, and fry the ingredients on low flame.
    2. Sprinkle the haldi (turmeric powder) and mix it well with the frying ingredients.
    3. Crack the 3 eggs and stir and mix continuously to make bhurgi.
    4. Garnish with freshly chopped coriander leaves.
