About this recipe:
Pumpkin puri is a must have sweet dish during the pumpkin season, as it is so easy to make and delicious. Each puri is crunchy and filled with flavorful essences of cardamom and ghee. The puris are delicious by themselves.
ghee as needed for shallow and deep frying
2 cups grated pumpkin
1-1.5 cups sugar
1 teaspoon elaychi (cardamom) powder
2 cups wheat flour
salt ( a pinch to bring out sweetness)
1/2 cup milk

Heat a pan with a tablespoon of ghee. Add grated pumpkin, stir and cook for 5 minutes.
Sprinkle sugar and elaychi powder to the pumpkin, mix well and cook for 5 more minutes.
Pour this fried mixture to the wheat flour. Mix, kneed and and make dough using milk, little by little. Sprinkle in a pinch of salt to bring out the sweetness of the puri. Make small dough balls.
Dust the rolling board, and roll each ball out into a medium shaped round puris. Meanwhile, heat a deep frying pan with ghee.
Deep fry the round shaped puris until golden brown.
