Heat a pan with soybean oil. Add cumin seeds, green chillies and chopped onions and tomatoes. Also add curry leaves. Fry until the onions turn pinkish in color. The cumin seeds should not turn black, just darker in color.
Sprinkle toasted peanuts and potatoes. Stir and mix.
Drain the poha from water. Add the poha to the pan with the ingredients. Stir and pour in the lemon juice. Sprinkle salt, turmeric powder and coriander leaves. Stir and cook for a bit until the poha is mixed well with the ingredients.
