About this recipe: Vegetable uttapa is a thicker version of dosa with various vegetables added to it. You can add the vegetables to your taste but I personally have found the following combo to be the most fitting. Vegetable uttappas are great as breakfast and tiffin.

Serves: 4 

  • 4 cups rice
  • 2 tablespoons poha
  • 2 cups udad dal
  • 1 teaspoon oil
  • 2 chopped onions
  • 1 tablespoon chopped tomatoes
  • 1 tablespoon chopped capsicum
  • 1/2 tablespoon chopped beans
  • 2 chopped green chilies

  1. Soak rice, poha and dal for 8 hours. After that make a fine paste of it and keep it in a moist place for 4 hours to get fermented.
  2. Take a tawa and heat it on a medium flame. Put some oil on tawa.
  3. Spread a thick layer of above paste on tawa, spread chopped onion, tomatoes, capsicum, beans, green chilies and salt on it. Allow the uttappa to rise.
  4. Cook for 2 minutes.
