    About this recipe: Dum Aloo is a famous north Indian dish. It is also one of the best ways to eat potatoes as there is such a great mix of cashews, coconut and cuscus. Serve with luchi, paratha or roti.

    Ingredients
    Serves: 5 

    • 5 to 6 small potatoes
    • 2 teaspoons haldi (turmeric) powder
    • salt as needed
    • 1 cup chopped onions
    • 1 cup tomatoes
    • 1 tablespoon cuscus
    • 5 to 6 cashew nuts
    • 1 tablespoon grated coconut
    • 1/2 cup fresh cream
    • 2 tablespoons soybean oil or butter
    • 2 teaspoons ginger garlic paste
    • 2 teaspoons red chili powder
    • 2 teaspoons garam masala
    • 1 teaspoon chopped mint leaves

    1. Boil the potatoes in hot water with a pinch of haldi and salt.
    2. Make a fine paste of onions, tomatoes, cuscus, cashew nuts and grated coconut by grinding properly. Mix with fresh cream and set aside.
    3. Heat a pan with soybean oil or butter. Add the paste with ginger garlic paste and fry for 5 minutes. Now add haldi, red chili and garam masala powders and salt. Stir and mix well.
    4. Add boiled potatoes and garnish with pudina (mint) leaves.
