About this recipe: A simple piece of bread topped with apple and pear jam and transformed into a decadent dish for breakfast or chai time. Great for when you want to impress someone hungry!

Serves: 2 

  • 3 tablespoons skimmed milk
  • 2 egg whites
  • Salt and black pepper
  • 4 slices day-old crusty white bread
  • 1-2 teaspoons butter
  • 4 tablespoons ready-made apple and pear spread
  • To serve
  • 1 tablespoon sugar
  • pinch of cinnamon, optional

  1. Whisk together the milk and egg whites in a shallow dish and season lightly. Dip both sides of the bread into the liquid.
  2. In a large frying pan, melt a little of the butter over a medium heat until it froths. Add two slices of bread and fry for 2-3 minutes until the bottoms are firm and golden brown.
  3. Remove the toast, melt more butter if needed, then cook the other side for 2-3 minutes until golden brown. Repeat with the remaining two slices.
  4. Coat with the apple and pear spread, sprinkle with a little sugar and cinnamon if you like, and serve.
  5. Variation: use raisin loaf instead of white bread, sprinkle with caster sugar and a pinch of cinnamon and top with a sliced banana.
