Baingan bharata

    Baigan Bharata or eggplant mash is a delicious South Indian dish. Eggplant itself is creamy and the added tastes of cumin and red chilli powder makes it great to eat with steamed rice.

    Serves: 4 

    • 1 large baingan (eggplant)
    • 3 tablespoons vegetable oil
    • 1 teaspoon cumin seeds
    • 2 tablespoons chopped onions
    • 2-3 curry leaves
    • 2 teaspoons red chili powder
    • 1 tablespoon peanuts
    • 1 teaspoon haldi (turmeric) powder
    • salt

    1. Cut 1-2 inch slits on the baingan with a fork or knife. Grease the baingan with oil.
    2. Heat a tawa and toast the baingan on low heat until its skin becomes brown.
    3. Now peel off the toasted skin of the baingan, and place the inside flesh in a separate bowl. With your hand, crush the flesh of the baingan so that it is mashed well.
    4. Heat a pan with oil, add cumin seeds and chopped onions. Stir and fry and add curry leaves, red chili powder, peanuts, haldi and salt. Mix well.
    5. Now add mashed baingan and fry it for 5 minutes.
