From the center of each bitter gourd, cut longitudinally all the way down until 1-2 inches off from the bottom. Repeat to make 4 petal like slits that open up the inside of the bitter gourd. Do make sure that you do not cut the entire slit off. Soak the bitter gourds in salted water for an half hour.
Grease a pan with oil. Toast the chopped onions and coconut until slightly brown. Add cuscus, gud ( jaggery), teel (sesame seeds), red chili, garam masala and haldi powders and salt and mix it all together.
Stuff this mixture into the soaked bitter gourds.
Heat the oil in a tawa and fry the stuffed bitter gourds until brown.
