Stuffed bitter gourd

    Bitter gourd has many helpful properties for strong health . Hence, innovative recipes such as this one are very much appreciated in India. This recipe reduces the bitterness of the gourd and give a dish which is crispy on the outside and delicious on the inside.

    • 4 to 5 small sized bitter gourds
    • salt as needed
    • water as needed
    • vegetable oil as needed
    • 3 tablespoons chopped onions
    • 3 tablespoons dry coconut
    • 1 tablespoon cuscus
    • 1 tablespoon gud ( palm date jaggery)
    • 1 tablespoon teel (sesame seeds)
    • 2 teaspoons red chili powder
    • 2 tablespoons garam masala
    • 1 tablespoon haldi powder ( turmeric)

    1. From the center of each bitter gourd, cut longitudinally all the way down until 1-2 inches off from the bottom. Repeat to make 4 petal like slits that open up the inside of the bitter gourd. Do make sure that you do not cut the entire slit off. Soak the bitter gourds in salted water for an half hour.
    2. Grease a pan with oil. Toast the chopped onions and coconut until slightly brown. Add cuscus, gud ( jaggery), teel (sesame seeds), red chili, garam masala and haldi powders and salt and mix it all together.
    3. Stuff this mixture into the soaked bitter gourds.
    4. Heat the oil in a tawa and fry the stuffed bitter gourds until brown.
