Mash potatoes, peas, cauliflower and beetroot together in a bowl. Set aside.
Heat a pan with oil, add cumin seeds, onions and tomatoes and fry until the onions turn slightly brown. Then add red chili, garam masala, haldi and pavbhaji masala powders and salt. Mix and cook for 2 minutes.
Now add all mashed vegetables, mix and then boil for 5 minutes.
