Prajakta's Pav Bhaji

    This recipe will give a spicy vegetable stir fry that can be served with Pav (bread). Enjoy it at any time of the day.

    Serves: 4 

    • 3 cups boiled and smashed potatoes
    • 2 cups boiled peas
    • 2 cups boiled and smashed cauliflower
    • 2 tablespoons grated beetroot
    • 3 tablespoons vegetable oil
    • 2 teaspoons cumin seeds
    • 4 cups chopped onions
    • 4 cups chopped tomatoes
    • 3 tablespoons red chili powder
    • 2 tablespoons garam masala
    • 1 teaspoon haldi (turmeric)powder
    • 2 tablespoons pav bhaji masala
    • salt as needed
    • 2 tablespoons chopped coriander
    • 2 tablespoons butter
    • 8 pavs or bread slices

    1. Mash potatoes, peas, cauliflower and beetroot together in a bowl. Set aside.
    2. Heat a pan with oil, add cumin seeds, onions and tomatoes and fry until the onions turn slightly brown. Then add red chili, garam masala, haldi and pavbhaji masala powders and salt. Mix and cook for 2 minutes.
    3. Now add all mashed vegetables, mix and then boil for 5 minutes.
    4. Serve with toasted pav (bread) and butter.
