Praj's Potato Bhaji
This is a very common yet popular bhaji dish, serve with chapatti and pickle.

2 tablespoons soybean or vegetable oil
1 teaspoon cumin seeds
1 teaspoon curry leaves
1 teaspoon green chili paste
1 cup chopped onions
1 teaspoon haldi powder (turmeric)
2 cups boiled and chopped potatoes, greased with some oil
salt as needed
1 tablespoon chopped coriander leaves
1 tablespoon grated coconut
- Heat a pan with soybean vegetable oil, add cumin seeds, curry leaves, green chili paste and chopped onions. Stir and fry until the onions turn a light brown.
- Now add haldi powder and chopped potatoes. Mix well with salt.
- Garnish with coriander leaves and grated coconut.
