Praj's Potato Bhaji

    This is a very common yet popular bhaji dish, serve with chapatti and pickle.

    Serves: 3 

    • 2 tablespoons soybean or vegetable oil
    • 1 teaspoon cumin seeds
    • 1 teaspoon curry leaves
    • 1 teaspoon green chili paste
    • 1 cup chopped onions
    • 1 teaspoon haldi powder (turmeric)
    • 2 cups boiled and chopped potatoes, greased with some oil
    • salt as needed
    • 1 tablespoon chopped coriander leaves
    • 1 tablespoon grated coconut

    1. Heat a pan with soybean vegetable oil, add cumin seeds, curry leaves, green chili paste and chopped onions. Stir and fry until the onions turn a light brown.
    2. Now add haldi powder and chopped potatoes. Mix well with salt.
    3. Garnish with coriander leaves and grated coconut.
