Kairichi chutney ( Mango chutney)

    This is a quite a unique chutney consisting of mangoes, seasoned with jaggery, and then garnished with crunchy sweet saunf. Enjoy with any main dish.

    Serves: 4 

    • 2 teaspoons vegetable oil
    • 1 teaspoon cumin seeds
    • 1 cup peeled and grated kairi ( raw mangoes)
    • 2 tablespoons jaggery ( gud)
    • 1 teaspoon sweetened fennel seeds (used as mouth fresheners in India, known as badi shep or saunf)
    • 1 teaspoon red chili powder
    • as needed salt

    1. Heat a pan with oil, add cumin seeds, stir and add grated kairi (raw mangoes) and gud ( jaggery). Stir and mix well.
    2. Turn off the heat, and mix in the saunf.
    3. Sprinkle red chili powder and salt. Mix well and serve.
