Cobiche vade

    These are deep fried slices made from a mix of chopped cabbage and typical Maharashtrian spices. Serve with chutneys.

    Serves: 4 

    • 1 cup finely chopped cabbage (cobi)
    • 2 tablespoons chopped tomatoes
    • 2 teaspoons red chili powder
    • 1 teaspoon haldi powder
    • 1 teaspoon cumin powder
    • 1 teaspoon coriander powder
    • ½ cup besan
    • Salt as needed
    • Water as needed
    • vegetable oil for deep frying

    1. Mix all the ingredients together except for the vegetable oil.
    2. Add a bit of water to make dough. Divide the dough into 2 parts. Flatten out each dough into a round roti or tortilla. Then roll from one end to the other to form a long roll. Repeat for the other dough portion.
    3. Steam these rolls for 5 minutes in a steamer.
    4. Allow to cool. Cut the rolls into round shapes.
    5. Heat a deep frying pan with vegetable oil, and deep fry the round slices.
