Alloo baigan curry

    This is a spicy curry of alloo (potatoes) and baingan (eggplant). Serve it with chapattis or rice.

    Ingredients
    Serves: 3 

    • 1 tablespoon vegetable oil
    • 1 teaspoon cumin seeds
    • 1 teaspoon mustard seeds
    • 2 tablespoons chopped onions
    • 1 tablespoon chopped tomatoes
    • ½ teaspoon haldi powder
    • 2 teaspoons red chili powder
    • 1 teaspoon garam masala powder
    • 1 cup peeled and chopped potatoes
    • 1 cup chopped baigan (eggplant) slices
    • Salt as needed
    • 1 teaspoon chopped coriander leaves

    1. Heat a pan with oil. Add cumin seeds and mustard seeds. Stir and add onions and tomatoes. Stir and fry.
    2. Now add haldi powder, red chili powder and garam masala powder. Mix.
    3. Then add chopped potatoes, baigan (eggplant) and tomatoes. Stir and add salt and coriander leaves.
    4. Cook until potatoes turn soft.
