About this recipe: Salmon is famous for heart healthy omega acids. This wonderful dish is flavoured with laung, dhania, adrak and oranges and makes a great dinner dish for a party or an intimate meal. Serve with rice and roasted veggies.

Serves: 4 

  • Freshly grated zest and juice of 1 orange
  • 2 tablespoons vegetable oil
  • 3 thin slices of fresh ginger, shredded
  • ½ teaspoon coriander seeds
  • 3 cloves
  • Salt and black pepper
  • 4 salmon steaks, about 175g each
  • Vegetable or olive oil for brushing

  1. Put the orange zest and juice, oil, ginger, coriander seeds and cloves in a large, shallow, glass or ceramic dish. Season with a little salt and black pepper and whisk briefly to mix.
  2. Add the fish and turn to coat in the marinade. Cover and chill for 2 hours, to marinate, turning the steaks after about 1 hour.
  3. When ready to cook, heat a heavy-based frying pan over a high heat until very hot. Brush pan lightly with oil.
  4. Lift the fish out of the marinade and remove any flavourings stuck to the flesh. Place the fish on the hot pan and immediately reduce the heat to medium-low. Cook for 3-5 minutes or until the fish lifts easily away from the griddle or pan. Turn and cook for a further 3 minutes, or until cooked through, and serve at once with wild rice and sweet peas.
