About this recipe: This is a deep fried flat bread made during Navratri, a fasting festival. It is served on a thali with other Navratri special dishes.

Serves: 5 

  • 3 cups Kuttu ki aata (buckwheat)
  • 1 tablespoon Sendha namak (sendha salt-special salt for navratri)
  • Water as needed
  • 1.5 cups desi ghee

  1. Mix buckwheat with sendha salt and water to make dough. Kneed well to make smooth dough.
  2. Make dough balls and roll out each ball into a roti or tortilla of medium size.
  3. Heat a kadhai or a deep frying pan with ghee (homemade ghee preferred).
  4. Add the round medium shaped tortillas to the hot oil. Deep fry the tortillas until golden-cream brown.
