About this recipe: This is a light and refreshing vegetable dish made from lauki or bottle gourd. Serve with warm kuttu ki puri during Navratri.

Serves: 4 

  • 1/2 kg lauki (bottle gourd), peeled and cut into small slices
  • 1 tablespoon ghee
  • 1 teaspoon cumin seeds
  • 3-4 green chillies, chopped
  • Salt as needed

  1. Heat a pressure cooker with ghee. Add cumin seeds and green chillies. Stir and fry until the cumin seeds darker in color to a brown shade.
  2. Add the lauki slices, stir and fry.
  3. Put the lid on and cook for 2 minutes.
  4. When the lauki releases water, add 1-2 cups of water.
  5. Stir and add salt. Mix.
  6. Put lid on and cook until 2 hisses occur.
