About this recipe:
This is a popular Maharashtrian rice dish, available in many restaurants. It is delicious by itself with raita and salad. It can be served with curries or bhajis.
As needed soybean oil
4-5 red chillies
1 onion, chopped
1 tomato, chopped
4 vegetables, each chopped and of 1/2 cup ( carrots, capsicum, peas and cauliflower are ideal)
2-3 teaspoons garam masala powder
1/2 teaspoon red chilli powder
Salt as needed
2 cups cooked rice
4 teaspoons ghee
2 onions, cut into rings for garnishing
- In a kadhai, heat 3 tablespoons of oil. Add red chillies, onions and tomatoes. Stir and add the chopped vegetables.
- Then add the garam masala and red chilli powders. Mix in salt and stir.
Add the rice and mix with ghee.
- Cook for 7-8 minutes.
- In a deep frying pan, heat oil. Deep fry the onion rings.
- Serve the veg pulao with deep fried onion rings.
