About this recipe: This is a mutton chap, consisting of which thin slices of meat that has been marinated with delicious ingredients and then grilled to perfection. It is delicious by itself, but can be served with pulao or paratha as well.

  • Soybean oil-as needed
  • 1/2 kg onion slices
  • 6 big dried red chillies
  • 1 kg mutton thin slices, boneless
  • 6 cinnamon sticks
  • 1 tablespoon ginger paste
  • 1 cup sweet yoghurt
  • Salt as needed
  • 2 tablespoons lemon juice
  • 6 cardamoms
  • 1/2 tablespoon garlic slices
  • 1/2 teaspoon sugar
  • 2 tablespoons onion paste
  • 2 tablespoons ghee


  1. Heat a deep frying pan with oil. Deep fry the onions until crispy brown. Transfer and allow to cool. Then grind the onions on to a paste.
  2. In the same pan, fry the red chillies. Then make a paste of the chillies as well.
  3. Mix the meat slices with fried onions and chilli pastes, cinnamon sticks, ginger paste, sweet yoghurt, salt, lemon juice, cardamoms, garlic, sugar and onion paste. Mix well and marinate for 2 hours.
  4. Heat a thick bottomed tawa with 250 g of soybean oil. Add the marinated ingredients. Put the lid on and cook on low heat.
  5. When the meat has cooked, and the oil surfaces on top, then add the ghee. Mix well, and cook and grill for another 5 minutes.
  6. Serve.
