About this recipe:
Labra is a pure vegetable dish. It is a very healthy and filling that is best enjoyed with roti or plain white rice.
1 cup medium sized papaya slices
1 cup medium sized ridge gourd slices
1 cup medium sized potato slices
1/2 cup green chillies
1/2 teaspoon turmeric powder
Salt as needed
1/2 teaspoon ginger paste
1/2 teaspoon garlic paste
Water as needed
2 tablespoons soybean oil
1 tablespoon onion slices
1 teaspoon coriander powder
1/2 cup fried crispy golden brown onion slices/peyaj beresta
- In a saucepan, add the papaya, ridge gourd, potatoes, green chillies, turmeric powder, salt, ginger and garlic pastes and a little bit of water. Mix and allow the vegetables to boil.
- When the water dries up and the vegetables have become boiled, stir well.
- Heat a pan with oil. Add the onions, fry and add the boiled vegetable mixture and coriander powder. Stir and fry.
Stir well until fried well, and the fried crispy onion slices.
