About this recipe: Labra is a pure vegetable dish. It is a very healthy and filling that is best enjoyed with roti or plain white rice.

Serves: 5 

  • 1 cup medium sized papaya slices
  • 1 cup medium sized ridge gourd slices
  • 1 cup medium sized potato slices
  • 1/2 cup green chillies
  • 1/2 teaspoon turmeric powder
  • Salt as needed
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon garlic paste
  • Water as needed
  • 2 tablespoons soybean oil
  • 1 tablespoon onion slices
  • 1 teaspoon coriander powder
  • 1/2 cup fried crispy golden brown onion slices/peyaj beresta

  1. In a saucepan, add the papaya, ridge gourd, potatoes, green chillies, turmeric powder, salt, ginger and garlic pastes and a little bit of water. Mix and allow the vegetables to boil.
  2. When the water dries up and the vegetables have become boiled, stir well.
  3. Heat a pan with oil. Add the onions, fry and add the boiled vegetable mixture and coriander powder. Stir and fry. Stir well until fried well, and the fried crispy onion slices.
