About this recipe: This is a vegetarian dish of lady fingers dipped in yummy gravy sauce. Serve with plain white rice.

Serves: 4 

  • 200 g lady fingers
  • 1 teaspoon turmeric powder
  • 1.5 teaspoons red chilli powder
  • Salt as needed
  • 1/4 cup soybean oil
  • 2 tablespoons onion paste
  • 1/2 teaspoon garlic paste
  • 1/4 teaspoon sugar
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala powder

  1. If the lady fingers are large sized, then cut off the heads the lady finger, and cut each in half. If the lady fingers are small sized, then just cut off the heads and leave the lady fingers as whole.
  2. Mix the lady fingers with a pinch of turmeric powder, red chilli powder and salt.
  3. Heat a frying pan with oil. Fry the lady fingers. Transfer out the lady fingers on to a plate.
  4. On the same pan, add the onions. Fry until light brown, and add the onion and garlic pastes, sugar,turmeric, red chilli, coriander and cumin powders.
  5. Stir and cook until the water released dries up a bit to form thick gravy.
  6. Add the fried lady fingers. Stir and mix. Put the lid on.
  7. Cook until the lady fingers are cooked completely and a thick gravy has formed. Mix in garam masala powder and serve.
